My dear friend, Sherrie, gave me this recipe. She says it fills her up and keeps her feeling full for hours. Plus, it’s so healthy! I made this last night and my husband loves it.
(You can also include 1/2 cup coconut — I threw some chocolate chips in my husband’s batch)
Here is the recipe:
2 cups Rolled Oats
1 cup Coursely Chopped Almonds
1/2 cup Shelled Sunflower Seed
1/4 cup Raw Toasted Wheat Germ (see below)
1/4 cup Flax Seeds (the darker the better)
1/2 cup Honey
1/2 cup Dried Fruit (I used cranberries soaked in apple juice)
2 Tblsp Olive Oil
Toasted Wheat Germ:
Take a small frying pan and warm it up (on medium) with about 1 Tbsp olive oil, throw the wheat germ in there, a pinch of salt and some cinnamon(the cinn. makes the biggest difference).
Combine all the dried ingredients together
Mix together the honey and olive oil
Combine everything together (except the fruit)
Warm oven to 300, put everything in a small greased baking dish. Bake 20 minutes. Take out and combine the dried fruit and put back in oven for 10 minutes.
ENJOY!!!
